Penne with Fresh Tomatoes, Lemon and Feta Recipe

3 medium whole (2-3/5" dia) Red Tomatoes
1 small Red Onions
1 tbsp Lemon Peel
2 tablespoon Olive Oil
0 1/2 tsp Salt
0 1/2 tsp Black Pepper
2 cup cooked Brown Rice Penne Pasta
1 cup, crumbled Feta Cheese
- Dice the tomatoes, slice the onion, zest the lemon then add all along with oil, salt and pepper to a bowl. Toss to combine and let sit at room temperature at least 30 minutes.
- Cook pasta according to package directions. Drain and toss with tomato mixture.
- Sprinkle with feta. Serve hot or at room temperature.
