Penne with Fresh Tomatoes, Lemon and Feta

Ingredients:

  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Peel
  • 3 medium whole (2-3/5" diameter) Red Tomatoes
  • 1/2 teaspoon Black Pepper
  • 2 cup cookeds Brown Rice Penne Pasta
  • 1 small Red Onion
  • 1/2 teaspoon Salt
  • 1 cup, crumbled Feta Cheese

Directions:

  1. Dice the tomatoes, slice the onion, zest the lemon then add all along with oil, salt and pepper to a bowl.  Toss to combine and let sit at room temperature at least 30 minutes.
  2. Cook pasta according to package directions. Drain and toss with tomato mixture.
  3. Sprinkle with feta. Serve hot or at room temperature.
