Ingredients:
- 2 tablespoons Olive Oil
- 1 tablespoon Lemon Peel
- 3 medium whole (2-3/5" diameter) Red Tomatoes
- 1/2 teaspoon Black Pepper
- 2 cup cookeds Brown Rice Penne Pasta
- 1 small Red Onion
- 1/2 teaspoon Salt
- 1 cup, crumbled Feta Cheese
Directions:
- Dice the tomatoes, slice the onion, zest the lemon then add all along with oil, salt and pepper to a bowl. Toss to combine and let sit at room temperature at least 30 minutes.
- Cook pasta according to package directions. Drain and toss with tomato mixture.
- Sprinkle with feta. Serve hot or at room temperature.
