Pan-Fried Trout

Ingredients:

  • 2 each Egg
  • 1 teaspoon Black Pepper, ground
  • 32 ounces Trout, Brook, Lake & Rainbow
  • 3 tablespoons Coconut Oil
  • 1 teaspoon Salt
  • 1/2 tablespoon Chili powder

Directions:

Use the Atkins recipe to make Atkins Soy-Free Flour Mix; you will need 1/2 cup.
  1. Heat the oil in a skillet over medium heat.
  2. In a shallow dish combine the flour mixture, chili powder, salt and pepper.
  3. In another shallow dish whisk the eggs with 1 tbsp water.
  4. Dip each whole trout into the flour mixture then the egg mixture and once again into the flour to fully coat.
  5. Fry fish until cooked through, about 3-5 minutes per side. Serve with lemon wedges and your favorite vegetable.
