Cooking tip: Smooth and creamy pistachio adds depth to this sweet vodka cocktail. Removing the skins from the pistachios ensures a beautiful light green color, but boiling them also helps soften and allow them to blend more easily.
Ingredients:
- 1/3 cup (41g) raw shelled pistachios
- 1/4 cup heavy cream
- 1/2 cup tap water
- 3 ounces Lily’s no sugar added white chocolate style chips
- 3 tablespoons truvia sweet completed stevia-erythritol sweetener
- 3 tablespoons truvia sweet completed brown stevia-erythritol sweetener
- 2 teaspoons (9g) unsalted butter
- 1 cup vodka
- 1 1/2 teaspoon vanilla extract
- 1 1/2 teaspoons no sugar added almond flavor
For the rim
- 1 tablespoon Lily’s no sugar added white chocolate style chips
- 1 tablespoon roasted pistachios, finely chopped
Directions:
- In a small saucepot over high heat, bring 2 inches water to a boil. Add 1/3 cup pistachios and continue to boil for 4 minutes. Strain off the water, and place pistachios in a clean towel. Rub pistachios in the towel to loosen and remove the skin.
- In a food processor, pulse prepared pistachios and heavy cream, scraping down the sides as needed, until pistachios are well broken down and a chunky paste is formed.
- In a medium saucepan over medium heat, stir together water, white chocolate chips, sweeteners and butter until everything is dissolved or melted, about 3 minutes. Pour into a blender and add the pistachio paste, blending until very well combined, scraping down the sides as needed. Once this mixture reaches room temperature, add vodka, vanilla extract and almond flavor, blending again until creamy and slightly frothy.
- Prepare rims of 5-ounce coupe glasses. On a small plate, microwave 1 tablespoon white chocolate style chips in 10 second increments until fully melted. With chopped pistachios on a separate small plate, dip the rim of each glass in melted chocolate, then dip in chopped pistachios.
- In a cocktail shaker, shake 5 ounces of the vodka mixture with a handful of ice until the outside of the glass is frosty, about 20 seconds. Strain into a pistachio rimmed glass and enjoy! One cocktail as described is one serving.
