Ingredients:
- 3 cups Peppermint (Mint)
- 1 tablespoon Red Wine Vinegar
- 4 cloves Garlic
- 1/2 cup Extra Virgin Olive Oil
- 1/3 cup shelled (50 halves) English Walnuts
Directions:
This recipe is suitable for all phase of the Atkins diet except for Induction due to the nuts. Each serving is about 2 tablespoons.
- Finely chop walnuts and garlic in food processor.
- Add mint leaves and chop finely.
- Add oil and vinegar and blend until pesto is smooth.
