Mint-Walnut Pesto
Cooking tip: If you’ve tried this sauce and like it, try experimenting with herbs and spices to flavor it your way!

Ingredients:

  • 3 cups Peppermint (Mint)
  • 1 tablespoon Red Wine Vinegar
  • 4 cloves Garlic
  • 1/2 cup Extra Virgin Olive Oil
  • 1/3 cup shelled (50 halves) English Walnuts

Directions:

This recipe is suitable for all phase of the Atkins diet except for Induction due to the nuts.  Each serving is about 2 tablespoons. 
  1. Finely chop walnuts and garlic in food processor.
  2. Add mint leaves and chop finely.
  3. Add oil and vinegar and blend until pesto is smooth.
