Ingredients:

  • 10 slices Atkins Low carb Wheat Bread
  • 1 1/2 tablespoons light olive oil
  • 1 cup shredded Monterey Jack cheese
  • 4 ounces salsa
  • 2 large (50g) scallions or green onions, sliced
  • 6 black olives, chopped
  • 1 ounce fresh cilantro, chopped

Directions:

Use the Atkins recipe to make Atkins Low carb Wheat Bread. You will need 10 servings.
  1. Heat oven to 400° F.
  2. Trim crusts from bread (save to make bread crumbs). Brush bread with olive oil on one side and lightly toast. Cut each slice into four pieces. Arrange squares on a baking sheet.
  3. Divide cheese onto each toast square; top cheese with a scant tablespoon of salsa. Sprinkle with green onions and chopped olives.
  4. Bake 10 minutes until cheese is bubbly. Sprinkle 2 Tbsp chopped cilantro over pizzas squares.
  5. Serve immediately.
