Ingredients:
- 1/2 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 1/2 pounds Swordfish
- 1 teaspoon leaf Oregano
- 1/2 teaspoon Lemon Zest
- 1/2 teaspoon Rosemary (Dried)
- 1/4 cup Extra Virgin Olive Oil
- 1 fluid ounce Fresh Lemon Juice
Directions:
- Zest the lemon and then juice it reserving 2 tablespoons juice. Mix olive oil, lemon juice, oregano, lemon zest, rosemary, salt and pepper in a resealable plastic bag. Add swordfish steaks; toss to coat. Marinate at room temperature 30 minutes, turning occasionally.
- Prepare a medium grill. Remove steaks from the marinade (discard marinade) and cook about 5 minutes per side for medium doneness.
