Macaroni and Cauliflower Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 1/2 cup Real Mayonnaise
  • 2 ounces Brown Rice Pasta, dry
  • 3 teaspoons Dijon Mustard
  • 1/3 cup chopped Celery
  • 1/4 cucumber (8-1/4") Cucumber (with Peel)
  • 2 cups Cauliflower
  • 1/2 teaspoon Garlic
  • 1/4 cup chopped Sweet Red Peppers
  • 2 teaspoons Sucralose Based Sweetener (Sugar Substitute)

Directions:

  1. Prepare pasta according to package directions. During the last 8 minutes of cooking time, add cauliflower florets. When pasta and cauliflower are tender, drain into a colander and rinse under cold water.
  2. In a large serving bowl, mix mayonnaise, minced garlic, mustard and sugar substitute. Dice the celery, red pepper and cucumber.  Add to the bowl and fold in pasta and cauliflower. Mix gently until all ingredients are combined.
  3. Season to taste with salt and pepper.  Serve immediately.
