Low Carb London Fog Cocktail
Cooking tip: Aquafaba is the liquid from canned chickpeas/garbanzo beans, and is used as an egg replacement in many vegan recipes. In this recipe it provides a beautiful foam on the top of the cocktail that is a delight to sip! To get aquafaba, start with a sealed can of garbanzo beans and shake it up. Then, into a fine mesh strainer over a measuring cup or bowl, open the can and pour the beans and liquid through the strainer. Allow to strain for a moment, and use the liquid in the bowl or cup in this recipe. The garbanzo beans can be used for another purpose.

Ingredients:

  • 1/4 teaspoon fresh lemon juice Canadian Nutrient File
  • 1 fluid ounce gin FNDDS
  • 1 1/2 teaspoons garbanzo bean liquid, organic Aquafaba
  • 2 fl-oz Atkins Black Tea Latte Protein Shake
  • 1 pinch table salt USDA

Directions:

Ingredient note: To get the grey color, we used Empress 1908 Indigo Gin for this recipe. 
  1. In a cocktail shaker, swirl together gin, aquafaba (the liquid from a can of chickpeas/garbanzo beans- see the cooking tip for more information), lemon juice, and small pinch of salt until well combined. Add Atkins Black Tea Latte Shake and fill with ice. Attach lid and shake for at least 30 seconds to develop froth.
  2. Strain into a 7 fluid ounce or larger coupe glass and serve.
