Cooking tip: Toasted sweet meringue tops this delightfully lemony cocktail for a dessert drink that takes the cake (or pie 😉). Making this small amount of meringue and toasting it with a kitchen torch is a little over the top, but totally worth it for the roasted marshmallow flavor and texture it imparts to this cocktail.
Ingredients:
For lemon simple syrup
- 1/3 cup water
- 3 tablespoons truvia sweet complete stevia-erythritol sweetener
- 1 tablespoon (6g) lemon zest
For meringue
- 1 large egg white
- 1/4 cup truvia sweet complete stevia-erythritol sweetener
- 1 pinch cream of tartar
- 1 pinch salt
For cocktails
- 6 ounces vodka
- 4 1/2 ounces limoncello flavored sparkling water
- 1 1/2 ounces fresh lemon juice
Directions:
- Place 3 5-ounce or larger coupe or martini glasses in the freezer to chill.
- In a small saucepan over medium high heat, stir together water and 3 tablespoons sweetener until gently simmering and sweetener is dissolved, about 4 minutes. Remove from heat, add lemon zest, cover and allow to steep for 30 minutes. Strain out the lemon zest before using. Note that some of the sweetener might recrystallize when the mixture cools. If this happens, give it a good stir before adding to the cocktail.
- For the meringue, in a medium heat proof bowl (glass or metal suggested) whisk together egg white, 1/4 cup sweetener, cream of tartar and salt. Place over a pot of simmering water, ensuring the bowl is at least 1-inch above the water, and whisk constantly until sweetener is dissolved and mixture comes to 160°F on an instant read thermometer.
- Remove the bowl from the water and use an electric hand mixer to whip to medium peaks. Prepare a pastry bag with a star tip and scrape meringue into the bag.
- To assemble each cocktail, fill a cocktail shaker with a handful of ice. Add 2 ounces vodka, 1 1/2 ounces limoncello flavored sparkling water, 1/2 ounce fresh lemon juice, and 1 ounce lemon simple syrup from step 2. Cover and shake until the exterior of the shaker is frosty, about 20 seconds. Strain into chilled coupe glass, and pipe meringue over the top, about 24 grams for each cocktail. Use a kitchen torch to lightly toast the meringue before serving. One cocktail as described is one serving.
