Low Carb Kiwi Spring Goddess Cocktail
Cooking tip: This simple recipe comes together pretty easily, with just two tips for best taste. First, don’t steep the elder flower and grapefruit peel for too long or the mix will turn bitter. We found 15 minutes was perfect for infusing the flavors without leading to too much bitterness. Note that you can make the simple syrup in advance and refrigerate for up to 5 days. Second, muddle the kiwi until no large chunks remain. This allows the kiwi flavor to fully infuse the drink for a cocktail you are sure to enjoy!

Ingredients:

  • 1 cup tap water FNDDS
  • 1/2 cup truvia, sweet completed granulated sweetener
  • 2 teaspoons fresh grapefruit peel
  • 16 fluid ounces sparkling water FNDDS
  • 1/4 cup elder flowers, dried
  • 2 eas fresh kiwi FNDDS
  • 6 cups municipal tap ice cubes USDA
  • 1/4 cup lime juice, unsweetened USDA
  • 4 fluid ounces gin FNDDS

Directions:

  1. Make elder flower simple syrup: In a small pot over medium heat, stir together water and sweetener and bring to a brisk simmer. Remove from heat, stir in dried elder flowers and grapefruit peel, cover and allow to steep for 15 minutes.
  2. Into a fine mesh strainer over a small bowl, strain elder flower simple syrup. Discard flowers and peel, cover and refrigerate the simple syrup until cool, at least 45 minutes.
  3. To assemble each cocktail, in the bottom of a cocktail shaker muddle ½ of a peeled kiwi (about 37 grams) until broken down. Add 2 fluid ounces elder flower simple syrup, 1 fluid ounce gin, ½ fluid ounce fresh lime juice and a handful of ice and shake until the exterior is frosty. Strain into a tall Collins glass filled with ice and top with sparkling water, about 4 ounces. Garnish with a kiwi slice if desired. One cocktail as described is one serving.
