Cooking tip: Vodka will go to work on the gummy bears and start dissolving them after about 24 hours. You will know the mixture is ready for the blender when you notice that parts of the gummy bears have broken off when shaking the mixture. After blending the gummy bear and vodka mixture, it will be pretty thick, so you need to add the preserves and some sparkling water to thin it out and help the final addition of sparkling water mix in easily.
Ingredients:
- 3 packs Atkins Endulge Gummy Bears
- 18 fluid ounces sparkling water FNDDS
- 3 tablespoons blueberry preserves, with fiber, sugar free Polaner
- 5 fluid ounces vodka FNDDS
- 1/2 teaspoon lemon zest USDA
- 1 ea fresh lemon juice, yield per wedge USDA
- 1 teaspoon Magic Baker zero sugar baking blend, Splenda
Directions:
Ingredient note: Please use lemon flavored sparkling water for best results.
- In a clean jar with a tight fitting lid combine vodka and 2 packs of Atkins Endulge Gummy Bears. Shaking occasionally, allow to soak in a cool, dry location for at least 24 hours.
- On a small plate, combine granulated sweetener and lemon zest. Use lemon wedge to rub around the rim of each of 3 small high ball glasses. Working with one glass at a time, invert on the granulated sweetener and coat rims evenly. Set aside to dry.
- Into a blender, pour in contents of the vodka and gummy bear jar. Blend on high until gummy bears are mostly disintegrated. Add ¾ cup chilled lemon flavored sparkling water and sugar free blackberry preserves. Blend on high until preserves are well mixed in, and mixture is frothing, about 2 minutes more.
- To assemble each drink, evenly divide mixture from the blender into each glass, just more than ½ cup in each. Top each glass with an additional ½ cup lemon sparkling water, and garnish evenly with remaining pack of gummy bears (about 4 for each glass). Serve immediately.
