Cooking tip: We love the layered look that comes from using indigo gin in this cocktail. To get the layers, a narrow flute is needed along with indigo gin and the “float” pouring method described. Feel free to substitute your favorite gin for a delicious cocktail without the layers.

Ingredients:

  • 2 teaspoons sugar free granulated sweetener
  • 3/8 teaspoon vanilla extract, divided
  • 4 fluid ounces fresh squeezed red grapefruit juice
  • 1/8 teaspoon liquid stevia extract
  • 4 dashes orange bitters
  • 1 cup ice
  • 8 ounces lime flavored, unsweetened sparkling water
  • 3 ounces Empress 1908 Indigo Gin

Directions:

  1. Rim the glasses: on a small plate, use a fork to combine granulated sweetener and 1/8 teaspoon vanilla extract until well combined. Dip the rims of two 8 ounce or larger flutes in water, then rim each glass in vanilla “sugar.” Allow to dry while you make the cocktails.
  2. In a cocktail shaker, combine grapefruit juice, ¼ teaspoon vanilla, 1/8 teaspoon liquid stevia extract, orange bitters and ice. Cover and shake until the outside is frosty. Evenly strain into the two rimmed glasses, about 2 fluid ounces in each. Top each drink with 4 ounces lime sparkling water and gently stir to combine. To “float” the indigo gin and create the layered effect in the photo, slowly and carefully pour gin over the back of a spoon into each drink. Garnish with a wedge of grapefruit and flowers if desired.
