Cooking tip: Fluffy, creamy, and cold, this white chocolate vodka cocktail has just the right Boo factor for a Halloween celebration, without the sugar! We drew a ghost face with a melted Atkins truffle, but no sugar added chocolate chips will also work for this little party trick.
Ingredients:
- 1 Atkins Endulge Milk Chocolate Truffle
- 1 cup heavy cream
- 1 tablespoon truvia erythritol and stevia sweetener (granulated)
- 1/2 teaspoon vanilla extract
- 1/4 cup no-sugar added white chocolate style chips (Lily’s brand)
- 3 tablespoons confectioners erythritol (Swerve brand)
- 3 ounces vodka
- 1 Atkins Strong Vanilla Protein Shake
- 2-3 cups ice
Directions:
- Prepare the glasses: roughly chop truffle and place in a heap on a small plate. Microwave in 15 second increments, stirring between, until melted. Use the back of a spoon dipped in the melted truffle to draw two eyes and a mouth on the inside of three 16 ounce stemless wine glasses. Place glasses, face side down so the melted chocolate doesn’t drip, in a refrigerator until chocolate is set, about 5 minutes.
- In a medium bowl, use an electric mixer to whip the cream until thickened. Add granulated sweetener and vanilla extract, then continue to whip the cream to stiff peaks. Refrigerate until needed.
- In a blender pulse together white chocolate style chips and confectioners style no sugar sweetener until mostly powdered and very well combined. Add vodka and blend on high until well mixed. Add Atkins Strong Vanilla Protein Shake and fill to about the 5 cup mark with ice. Blend until Ice is broken up, then evenly pour into prepared glasses, leaving the top ½-inch of each glass unfilled. Scrape whipped cream into a pastry bag and evenly pipe in a swirl pattern over each cocktail, about 2/3 cup for each cocktail. Serve while cold. One drink as described is one serving.
