Cooking tip: Gentle fall spices combine with hints of apple and rye whiskey for a lower ABV cocktail perfect for sipping all season. Apple simple syrup provides a delicious flavor base for this recipe. To get the most apple flavor, without too many net carbs, be sure to simmer for 15 minutes, then steep for 15 minutes. When straining the apple and cinnamon sticks out of the simple syrup, gently press so some of the apple mush comes through the strainer, scraping the underside with a spoon or spatula to collect the flavorful goodness, and add that to the simple syrup. Note you can make this simple syrup in advance and refrigerate it, but plan to use it up within 3-5 days.
Ingredients:
- 3/4 cup water
- 1/3 cup truvia sweet complete granulated stevia-erythritol sweetener
- 1 small (144g) granny smith apple
- 1 cinnamon stick
- 4 fluid ounces rye whiskey
- 8 cups ice, divided
- 8 fluid ounces lime & ginger sparkling water
- 1/2 cup (54g) granny smith apple cubes, for garnish
Directions:
- Make apple simple syrup: In a medium sauce pot with a lid, bring water to a boil over high heat. Add sweetener and stir until dissolved. Add finely chopped apple and cinnamon stick, bring back to a simmer, reduce heat to maintain simmer, cover and continue to simmer for 15 minutes. Keeping the pot covered, remove from heat and steep for 15 minutes. Using a fine mesh strainer, gently press liquid from apple mush into a clean jar. Scrape apple mush that came through the strainer (from the underside of the strainer), stirring into the liquid and set aside to cool until needed. Refrigerate if making more than 2 hours in advance.
- To assemble each cocktail, into a cocktail shaker pour 1 1/2 ounces apple simple syrup (from step 1) and 1 ounce rye whiskey. Add about 1/2 cup ice, cover and shake for 20 seconds, until cold on the outside. Strain into a 12 fluid ounce or larger rocks glass with fresh ice, top with 2 fluid ounces unsweetened lime and ginger flavored sparkling water and garnish with about 2 tablespoons apple cubes (13 grams). One cocktail as described is one serving.
