Ingredients:

  • 3 sugar free peppermint starlight mints
  • 1 tablespoon no sugar added semi sweet style chocolate chips
  • 5 tablespoons heavy cream
  • 1/4 cup no-sugar added white chocolate style chips (Lily’s brand)
  • 3 tablespoons confectioners erythritol (Swerve brand)
  • 1/8 teaspoon no sugar added peppermint extract
  • 1/8 teaspoon vanilla extract
  • 2-3 cups ice
  • 7 ½ fluid ounces unsweetened coconut milk
  • 3 ounces vodka

Directions:

  1. Prepare the glasses: Crush mints and place on a shallow plate. On another shallow plate, microwave no sugar added chocolate chips in 10 second increments, stirring between each, until melted, about 40 seconds. Dip the rim of each of 3 6-ounce martini glasses first in the melted chocolate, then in the crushed mints. Place glasses in the freezer until needed.
  2. In a small pot over low heat, stir together heavy cream, white chocolate style chips, and confectioners erythritol until chips are melted and sweetener is dissolved, about 3 minutes. Remove from heat, stir in peppermint and vanilla extract, and allow to cool for about 5 minutes.
  3. In a cocktail shaker with a handful of ice add 2 ½ ounces coconut milk, 1 ounce vodka, and 1 ½ ounces of the cooled heavy cream mixture. Shake vigorously until the outside of the shaker is frosty, about 20 seconds, then strain into a prepared martini glass and serve. One cocktail as described is one serving.
