Ingredients:
- 1 1/2 teaspoons baking chocolate, grated, unsweetened USDA
- 1/2 teaspoon cinnamon, ground USDA
- 1 shake Atkins Creamy Cinnamon Swirl Shake
- 1/2 cup bourbon whiskey FNDDS
- 1 1/3 cups low carb triple chocolate ice cream, Rebel brand
- 3 tablespoons whipped heavy whipping cream USDA
- 30 chips white chocolate style baking chips, Lily's no sugar added
Directions:
- Using a double boiler, or a small saucepan of boiling water with a heat proof bowl over the top, gently melt the white chocolate style baking chips, stirring after a minute or two, until melted. Remove from heat and coat the rims of two mugs with melted white chocolate style chips.
- On a small plate, combine the chocolate shavings and cinnamon. Dip the white chocolate rims in the chocolate/cinnamon mixture. Set any leftover chocolate-cinnamon mixture aside. Scoop 2/3 cup ice cream into each mug.
- Warm the Atkins Creamy Cinnamon Swirl Protein Shake in a small saucepan over medium heat until simmering. Pour half the shake over each mug of ice cream, add 2 ounces bourbon to each, and top each with 1 ½ tablespoons unsweetened whipped cream. Sprinkle evenly with remaining chocolate and cinnamon mixture, and garnish with a cinnamon stick if desired. Serve while warm.
