Cooking tip: We call for cooked bacon in this recipe, so feel free to use up leftover cooked bacon, or cook in your preferred way. Using the oven to bake bacon is a great way to ensure the slices stay pretty flat. One additional tip is to use a small capacity ice cube tray for this recipe so the ice cubes break down more easily in the blender. Large ice cubes can be more difficult for a standard blender to process.
Ingredients:
- 1 each Atkins Dark Chocolate Royale Shake
- 2 tablespoons creamy peanut butter, natural Smucker's
- 2 1/2 fluid ounces bourbon whiskey FNDDS
- 1/8 teaspoon cocoa powder, unsweetened USDA
- 1/4 cup heavy whipping cream USDA
- 2 slices cooked bacon FNDDS
- 2 teaspoons Swerve confectioners erythritol based sweetener
Directions:
- In an ice cube tray, freeze 8 1-tablespoon portions of Atkins Dark Chocolate Royale Shake until solid, about 4 hours. Place the remaining portion of the shake into the refrigerator to chill.
- In a blender, process frozen shake ice cubes, remaining 7 fluid ounces chilled shake, peanut butter and bourbon. Blend on high until ice cubes are broken down, ingredients are well mixed and frothy. Divide evenly into two glasses, about 7 fluid ounces (3/4 cup + 2 tablespoons) in each.
- In a small flat bottom bowl, whip heavy cream and confectioners sweetener to soft peaks. Evenly top each glass of milkshake with the whipped cream, sprinkle each with a pinch of cocoa powder, and then place a crispy piece of cooked bacon in each glass. One glass as described is one serving.
