Cooking tip: This salad layers the texture of shaved brussels sprouts with savory bacon, red onion, parmesan, gently sweet pomegranate and creamy dressing. For optimal flavor in every bite, cut each salad component into smallish pieces so they are evenly distributed and come through in each bite.
Ingredients:
- 3 tablespoons olive oil USDA
- 2 tablespoons wine vinegar FNDDS
- 2 tablespoons fresh lemon juice Canadian Nutrient File
- 3 tablespoons mayonnaise, real Best Foods
- 1/4 teaspoon table salt USDA
- 1/4 teaspoon black pepper, ground USDA
- 1 teaspoon yellow mustard seeds Canadian Nutrient File
- 1 teaspoon dijon mustard Woodstock
- 1 tablespoon sugar free maple flavor syrup, Maple Grove Farms
- 1 teaspoon fresh garlic FNDDS
- 16 ounces fresh brussels sprouts USDA
- 6 slices cooked bacon FNDDS
- 1/2 cup pecans, halves USDA
- 2 ounces parmesan cheese, hard USDA
- 1/2 cup fresh red onion USDA
- 1/3 cup fresh pomegranate, arils POM Wonderful
Directions:
- In a small bowl whisk together mayonnaise, olive oil, lemon juice, white wine vinegar, sugar free maple syrup, Dijon mustard, mustard seeds, minced or pressed garlic, salt and pepper.
- Use a food processor to thinly slice clean brussels sprouts and place into a large bowl. Add roughly chopped bacon, pecans, sliced onion, shaved parmesan cheese, and pomegranate arils. Pour dressing over the salad and toss. Taste and add salt if desired. One serving is one rounded cup of salad.
