- 15 fl-oz Atkins Milk Chocolate Delight Shake
- 1/8 teaspoon peppermint extract
- 1/4 teaspoon cocoa powder, unsweetened USDA
- 4 tablespoons heavy whipping cream USDA
Directions:
- In a medium saucepan over medium heat, warm Atkins Milk Chocolate Delight Shake (1 full shake plus ½ cup), 2 tablespoons cream, and peppermint extract, stirring frequently, until steaming and bubbles begin to form around the edges, about 5 minutes.
- In a small bowl, whip remaining 2 tablespoons heavy cream to soft peaks.
- Divide peppermint hot chocolate between 2 mugs, about 1 cup in each. Top with half of the whipped cream (a heaping tablespoon), and sprinkle evenly with cocoa powder. Garnish with a leaf of fresh peppermint if desired. One cup as described is one serving.
