Cooking tip: This simple keto hot cocoa can be adapted with your favorite flavor! Replace the peppermint extract with your favorite flavor extract for an endless variety of warming hot cocoa drinks. The key to this recipe is to keep an eye on it while heating on the stove, stirring frequently to prevent skin from forming and prevent it from coming to a boil or scorching.

Ingredients:

  • 15 fl-oz Atkins Milk Chocolate Delight Shake
  • 1/8 teaspoon peppermint extract
  • 1/4 teaspoon cocoa powder, unsweetened USDA
  • 4 tablespoons heavy whipping cream USDA

Directions:

  1. In a medium saucepan over medium heat, warm Atkins Milk Chocolate Delight Shake (1 full shake plus ½ cup), 2 tablespoons cream, and peppermint extract, stirring frequently, until steaming and bubbles begin to form around the edges, about 5 minutes. 
  2. In a small bowl, whip remaining 2 tablespoons heavy cream to soft peaks.
  3. Divide peppermint hot chocolate between 2 mugs, about 1 cup in each. Top with half of the whipped cream (a heaping tablespoon), and sprinkle evenly with cocoa powder. Garnish with a leaf of fresh peppermint if desired. One cup as described is one serving.
