Keto Golden Milk Protein Bites
Cooking tip: Snack bites are the perfect keto friendly meal prep option to add to your lunch bag. Depending on the amount of oil in the almond butter, you may need to use slightly more or less coconut flour to get the right texture for the almond butter based dough. You want the dough to be slightly oily, and slightly crumbly, so it will easily cover and stick to the Atkins bar piece in the center.

Ingredients:

  • 2 1/2 teaspoons turmeric, ground USDA
  • 3 tablespoons breakfast syrup, sugar free Smucker's
  • 2 tablespoons Hemp Hearts hemp seeds, shelled Manitoba Harvest
  • 1/4 teaspoon black pepper, ground USDA
  • 1/8 teaspoon table salt USDA
  • 1/2 teaspoon ginger, ground USDA
  • 1/2 teaspoon cinnamon, ground USDA
  • 1/2 cup almond butter USDA
  • 1 pinch nutmeg, ground USDA
  • 1 pinch cloves, ground USDA
  • 1 teaspoon coconut flour, finely ground, organic King Arthur Flour
  • 1 bar Atkins Vanilla Macadamia Nut Soft Baked Energy Bar
  • 1/4 svg vanilla milkshake protein powder FoodData Central: Quest Nutrition
  • 2 teaspoons canned coconut cream USDA
  • 1/2 tablespoon coconut, shredded, unsweetened Now

Directions:

  1. In a large bowl, mix together almond butter, sugar free maple syrup, hemp hearts, turmeric, ginger, cinnamon, pepper, salt, nutmeg and cloves until very well combined. Mix in coconut flour until a slightly oily dough forms. 
  2. Cut the Atkins Vanilla Macadamia Nut Soft Baked Bar into 12 even pieces. Wrap each piece of bar in about 1 tablespoon almond butter mix, forming 12 even balls. Set on a baking sheet or plate.
  3. In a small bowl or cup, use a fork to combine protein powder and coconut cream to a thick icing consistency. Top eight of the bites with the icing, about ½ teaspoon on each. Sprinkle a pinch of hemp seeds over four of the iced bites. Press the four un-iced bites in coconut shreds. Store in the refrigerator in a covered container for up to 5 days. One ball as described is one serving.
