Ingredients:

  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 2 tablespoons unsweetened ketchup
  • 1 tablespoon stone ground mustard
  • 1 teaspoon horseradish sauce
  • 4 ounces corned beef brisket
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup canned sauerkraut, drained

Directions:

  1. In a small saucepan over medium low heat, blend the softened cream cheese, sour cream, unsweetened ketchup, mustard, and horseradish until cream cheese is melted and everything is well combined. Add the corned beef, Swiss cheese and sauerkraut. Mix to distribute all ingredients. 
  2. If using a small slow cooker, continue to warm over medium heat, stirring frequently, until the Swiss cheese melts and everything is is warmed through. Place into a 2-cup capacity small crockpot to stay warm.
  3. If not using a slow cooker, heat oven to 350°F. Smooth the dip into a small oven proof skillet or baking dish. Bake for 30 minutes, until dip is bubbling throughout and cheese is fully melted. Serve immediately. 
  4. Serve with celery stalks (1 medium stalk for 0.5g net carbs), Jicama slices (1/4 cup for 1.2g net carbs), pork rinds (1 ounce for 0 net carbs), or other vegetables.
