Keto Cloud Bread Buns

Ingredients:

  • 4 tablespoons Cream Cheese, original
  • 2 each Egg
  • 1/16 teaspoon Cream of Tartar
  • 1/8 teaspoon Salt

Directions:

  1. Preheat the oven to 300°. Line a sheet pan with parchment paper.
  2. Separate the eggs, placing yolks in a medium bowl and whites into the bowl of a stand mixer. Whip egg whites with a pinch of cream of tartar into stiff peaks.
  3. Warm the cream cheese gently in a microwave (15 seconds) or over steaming water. Whisk cream cheese together with egg yolks and salt until smooth. Gently fold in egg whites, one third at a time, until combined and very fluffy.
  4. Form buns by scooping ¼ cup of batter onto the parchment lined sheet pan, spreading gently into 3-inch rounds with about 1 inch between. One sheet pan should hold 8 buns. Bake at 300° for 25-35 minutes, until the tops are nicely browned. Let the buns cool on the sheet pan before serving at room temperature. Store buns separated with parchment in the refrigerator or freezer. One serving is two buns.
