Keto Cauliflower-Parmesan Chips

Ingredients:

  • 2 cups frozen cauliflower, riced Green Giant
  • 1/4 teaspoon black pepper, ground USDA
  • 1 cup fresh parmesan cheese, shredded Stella Foods
  • 1/2 teaspoon italian seasoning blend Spice Barn

Directions:

  1. Position oven racks in top third and bottom third of oven; heat oven to 400°F. Prepare two baking sheets with parchment paper.
  2. Place frozen cauliflower rice in a microwave safe bowl and microwave as directed on the package, about 4 minutes. Allow to cool until comfortable to touch. Using a clean kitchen towel or paper towels, place the cooked cauliflower in the center of the towel and squeeze out as much liquid as possible. Scrape cauliflower into a medium bowl.
  3. Into the bowl with the cauliflower, add parmesan cheese and seasonings, mixing until evenly distributed. Use a tablespoon measure to create 20 even mounds (10 on each baking sheet) of cauliflower mix about two inches apart. Pat each one into a roughly 2 ½-inch diameter circle no more than 1/8 inch thick.
  4. Bake for 14-15 minutes until golden, rotating top to bottom after 10 minutes, and watching closely in the last few minutes to prevent burning. Allow to cool for at least 10 minutes before removing from the baking sheet.
  5. One serving is 5 chips.
