Keto Air Fryer Pistachio Crusted Tilapia
Cooking tip: An air fryer makes cooking just about any type of fish a breeze. Work with evenly thick pieces of fish so they all finish cooking at the same time, and be sure to spray the air fryer basket to keep fish without skin from sticking. Ingredients:

  • 1/2 teaspoon fresh garlic FNDDS
  • 1 teaspoon dijon mustard Woodstock
  • 1 ounce pistachios FNDDS
  • 6 ounces raw tilapia Canadian Nutrient File
  • 1 tablespoon Real Lemon lemon juice, 100% FNDDS
  • 2 teaspoons fresh parsley FNDDS
  • 2 teaspoons olive oil USDA
  • 1 teaspoon allulose, liquid sweetener

Directions:

  1. Heat air fryer to 390°F.
  2. In a small bowl, whisk together lemon juice, oil, mustard, allulose, and minced or pressed garlic.
  3. In a separate small bowl, combine well chopped pistachios, chopped parsley, and 1 ½ teaspoons of the lemon mixture from step 1.
  4. Coat both sides of tilapia evenly with the remaining lemon mixture. Spray the air fryer basket with cooking oil and cook tilapia for 3 minutes. Gently flip the fish, evenly coat in pistachio mixture and cook until flakey and reaches an internal temperature of 140°F, about 2 minutes more.
  5. Divide into two equal portions and serve.
