Cooking tip: For best results, we suggest using just barely ripe, or slightly unripe avocados for this recipe. They will hold their shape the best for breading and frying, and the avocados become softer as they cook. When breading the avocado wedges, note that you want a thin layer of almond flour, really just a bit more than a dusting, to allow the egg wash to adhere. If this layer is overly thick, it makes for a thicker breading that does not crisp as well. We found that one egg was enough, but you might need to add another egg if the almond flour coating on your fries is thicker, your egg is a bit smaller, or if your avocados are very large. Finally, note that low carb breading such as this is a bit easier to burn, so watch your fries in the last 2-3 minutes and pull them out before they get too dark in color.
Ingredients:
- 2 tablespoons almond flour, super finely ground, gluten free King Arthur Flour
- 1 lrg raw egg USDA
- 8 tablespoons ranch salad dressing Primal Kitchen
- 1/4 teaspoon table salt USDA
- 2 eas fresh avocado USDA
- 1 bag Atkins Ranch Protein Chips
- 2 tablespoons olive oil USDA
- 2/3 cup parmesan cheese, grated USDA
Directions:
Ingredient note: Not quite ripe avocados work best for this recipe.
- Warm air fryer to 390°F.
- Crush Atkins Ranch Protein Chips into crumbs in the bag, then empty into a medium flat bottom bowl. Use a fork to mix in grated parmesan cheese and set aside.
- In another medium flat bottom bowl, combine almond flour and salt.
- In a small flat bottom bowl, beat egg.
- Cut each avocado into 8 even wedges, peeling the skin and discarding the pits. Working with one wedge at a time, toss with the almond flour mixture until evenly but lightly coated. Place in the egg, ensuring each surface is moistened, then dip in the bowl with the chip crumbs, coating evenly. Place on a baking sheet or plate and continue until all avocado wedges are coated. Generously spray all sides with olive oil.
- In the warm air fryer, cook a single layer of avocado fries for 4 minutes, then flip and cook another 2-3 minutes or until the coating is browned and crispy. Repeat if needed until all avocado fries are cooked. Serve on a platter with ranch dressing for dipping. One serving is two avocado fries as described with 1 tablespoon dressing.
