Kale with Pears and Onions

Ingredients:

  • 1/8 teaspoon Nutmeg (Ground)
  • 1 pound Kale
  • 1 pear, medium (approx 2-1/2 per lb) Pears
  • 1/4 teaspoon Curry Powder
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 medium (2-1/2" diameter) Onions
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Directions:

  1. Cook kale in a large pot of boiling, lightly salted water until bright green and wilted, about 3 minutes.  Drain, cool 10 minutes, and squeeze out excess liquid, coarsely chop.
  2. Heat oil in a large nonstick skillet over medium-high heat.  Add sliced onion and cook, stirring occasionally, until lightly golden, about 6 to 7 minutes.
  3. Stir in sliced pear and cook until crisp-tender, 2 to 3 minutes.
  4. Add curry and nutmeg and cook until fragrant, about 30 seconds.
  5. Add kale and salt and pepper and cook, stirring frequently, until tender, about 3 to 4 minutes. Serve warm.
