Keto Irish Pub Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 3 stalk, medium (7-1/2" - 8" long) Celery
  • 1 cup Cauliflower
  • 1/8 teaspoon leaf Tarragon
  • 2 cups Red Cabbage, raw, shredded
  • 10 Cherry Tomatoes
  • 6 large Boiled Eggs
  • 1/8 dash Black Pepper
  • 1/4 cup Heavy Cream
  • 1/4 cup Tap Water
  • 9 cups Boston or Bibb Lettuce, raw, chopped
  • 1/2 cup slice Cucumber (with Peel)
  • 1 1/2 teaspoons Rosemary
  • 1/4 teaspoon Salt
  • 1/2 cup chopped Zucchini
  • 6 ounces Blue or Roquefort Cheese
  • 1 1/2 cups Button Mushroom, raw, sliced
  • 2/3 cup Real Mayonnaise

Directions:

Top this salad with cooked sliced chicken to complete your meal. 
  1. Make salad: in a large bowl, toss together lettuce, cabbage, chopped celery, sliced cauliflower, sliced mushrooms, chopped cucumber, chopped zucchini, quartered tomatoes and diced eggs.
  2. Make dressing: in a medium bowl, combine mayonnaise, heavy cream, water, rosemary, tarragon, salt and pepper. Whisk until well blended, then stir in cheese.
  3. Just before serving, pour dressing over salad, and toss well.
