Individual Keto Breakfast Mexi Pepper

Ingredients:

  • 1 ounce Pork and Beef Chorizo
  • 1/2 medium (approx 2-3/4" long, 2-1/2" diameter) Sweet Red Peppers
  • 1/4 ounce Cheddar Cheese
  • 1 large Egg (Whole)
  • 2 tablespoons chopped Onions
  • 1 ounce Ground Beef (80% Lean / 20% Fat)

Directions:

  1. Preheat oven to 400°F and line a baking sheet with foil. Cook chorizo and drain off excess fat.
  2. Place chorizo in mixing bowl and combine with the beef, white onion, cheese and eggs.
  3. Prepare bell pepper by cutting in half lengthwise. Scoop out seeds and cut away rib (white part). 
  4. Fill pepper with the meat mixture and place on the prepared baking sheet. Bake for 25 - 30 minutes and serve hot.
