Ingredients:
- 2/3 each Bay Leaf
- 1 pound Sauerkraut (Solid and Liquids, Canned)
- 3 2/3 cups Beef Broth, Bouillon or Consomme
- 1/8 teaspoon Black Pepper
- 2 tablespoons Canola Vegetable Oil
- 6 each Frankfurter or Hot Dog
- 1 3/4 cups Tap Water
- 2 tsp or 1 packets Yellow Mustard
- 1/8 teaspoon Salt
- 1 tablespoon Sucralose Based Sweetener (Sugar Substitute)
- 1/2 small Onion
Directions:
- In a medium pot over medium-high heat, warm oil. Add chopped hot dogs and onions and sauté, stirring frequently, until hot dogs are browning and onions are soft, about 5 minutes.
- Stir in broth, water, sauerkraut (liquid and solids), sweetener, mustard, and bay leaf and bring to a simmer. Reduce heat if needed and simmer 5 minutes, until hot dogs are fully cooked and flavors have blended. Remove bay leaf, stir in salt and pepper, and serve while hot.
- One serving is about 1 ¾ cups soup. Garnish with additional mustard if desired.
