Hot-Dog Soup
Cooking tip: Did you know that you can easily portion out and freeze soup to save for a busy night down the road? When ready to reheat, either microwave or heat up in a pot over the stove with a splash of water.

Ingredients:

  • 2/3 each Bay Leaf
  • 1 pound Sauerkraut (Solid and Liquids, Canned)
  • 3 2/3 cups Beef Broth, Bouillon or Consomme
  • 1/8 teaspoon Black Pepper
  • 2 tablespoons Canola Vegetable Oil
  • 6 each Frankfurter or Hot Dog
  • 1 3/4 cups Tap Water
  • 2 tsp or 1 packets Yellow Mustard
  • 1/8 teaspoon Salt
  • 1 tablespoon Sucralose Based Sweetener (Sugar Substitute)
  • 1/2 small Onion

Directions:

  1. In a medium pot over medium-high heat, warm oil. Add chopped hot dogs and onions and sauté, stirring frequently, until hot dogs are browning and onions are soft, about 5 minutes.
  2. Stir in broth, water, sauerkraut (liquid and solids), sweetener, mustard, and bay leaf and bring to a simmer. Reduce heat if needed and simmer 5 minutes, until hot dogs are fully cooked and flavors have blended. Remove bay leaf, stir in salt and pepper, and serve while hot.
  3. One serving is about 1 ¾ cups soup. Garnish with additional mustard if desired.
