Hibiscus Mojito Cooler (Mocktail)

Ingredients:

  • 3/4 ounce fresh peppermint USDA
  • 4 cups brewed hibiscus tea, from tea bag FNDDS
  • 5 tablespoons lime juice, 100%, fresh squeezed FNDDS
  • 2 tablespoons allulose, liquid sweetener
  • 32 fluid ounces lime sparkling water, unsweetened Good & Gather
  • 1 ea fresh lime FNDDS

Directions:

  1. In a small sauce pot over medium heat bring 4 cups water to a boil. Remove from heat, drop in 4 tea bags, cover and steep for 10 minutes. Remove tea bags.
  2. Wash the mint and set aside 8 sprigs for garnish. Place remaining mint leaves in a 32 ounce or larger canning jar, and use a wooden spoon to muddle the mint leaves. Pour the hibiscus tea over the mint leaves, cover and refrigerate until chilled, at least 3 hours.
  3. Into a 64 ounce or larger pitcher, pour the mint and hibiscus tea. Add lime juice and liquid sweetener and stir to dissolve and combine. Pour in chilled lime sparkling water and serve.
  4. To serve, fill a glass with ice, add 1 cup hibiscus mojito, and garnish with mint sprigs and lime rounds.
