Keto Herbed Smoked Salmon in Tomato Halves
Cooking tip: Having a party? When planning your low carb spread, think about which dishes you can make in advance and which need fresh ingredients that day.

Ingredients:

  • 1/2 teaspoon Extra Virgin Olive Oil
  • 5 large Eggs (Whole)
  • 1 tablespoon Cream Cheese
  • 2 medium whole (2-3/5" diameter) Red Tomatoes
  • 4 ounces Smoked Chinook Salmon (Lox)
  • 1/3 tablespoon Parmesan Cheese (Grated)
  • 2 tablespoons chopped Chives

Directions:

Herbes de Provence is a blend of dried herbs often used in southern France. You can find it in the spice section of well-stocked supermarkets or use two or more of the following dried herbs: basil, fennel, lavender, marjoram, rosemary, sage, summer savory and thyme.  You will need 1/2 teaspoon. 
  1. Preheat broiler.
  2. Cut tomatoes in half and scoop out seeds. Drizzle each half with a little olive oil and sprinkle with the Herbes de Provence. Broil for about 3 minutes to heat tomatoes. Turn off broiler and close oven door.
  3. Meanwhile, in a medium skillet over medium heat, scramble the eggs. Before they are set, add salmon, cream cheese and diced chives.
  4. Remove tomatoes from oven and fill each with one-quarter of the egg mixture. Sprinkle with cheese and serve.  
  5. For holidays, garnish with a thin slice of green bell pepper and serve 1/2 serving as an appetizer or side dish.
