Ingredients:
- 2 pounds Shrimp
- 1 pepper, large (3-3/4" long, 3" dia) Yellow Sweet Peppers
- 3 head (5" dia) Butterhead Lettuce (Includes Boston and Bibb Types)
- 1 cup sliced Cucumber (Peeled)
- 5 large (1" to 1-1/4" diameter) Radish
- 2 stalk, medium (7-1/2" - 8" long) Celery
- 3 heads Cos or Romaine Lettuce
- 1 slice, thin Onions, raw
Directions:
Use the Atkins recipe for Green Goddess Dressing on this salad.; you will need 2 tablespoons for each serving. This salad is about 2g NC higher than recommended for a meal in Phase 1 so please be careful to modify your NC intake when choosing this recipe.
- Cook shrimp in boiling water for 2-4 minutes until they curl and turn pink. Drain and put into ice water bath until cool. Once cool, drain, pat dry and set aside.
- Arrange Romaine and Boston lettuce on a large platter, top with sliced radishes, sliced cucumber, diced celery, diced bell pepper, red onion slice separated into rings and shrimp. Drizzle with 12 tablespoons of Green Goddess Dressing. Serve immediately.
