Hatch Green Chile, Cheese and Egg Bake

Ingredients:

  • 2 tablespoons Heavy Cream
  • 1/8 teaspoon Black Pepper
  • 8 large Eggs
  • 1/4 teaspoon Salt
  • 1 1/2 cups shredded Cheddar Cheese
  • 4 ounces Green Chili Peppers (Canned)
  • 1/2 teaspoon Garlic Powder

Directions:

  1. Preheat oven to 350°F.  Prepare a 9-inch by 9-inch square pan with aluminum foil and spray it with oil spray.  
  2. In a blender, blend together the chiles, eggs, cream, garlic powder, salt, pepper, and 1 cup cheese until smooth.    Poor in prepared pan and bake covered for 45 minutes or until eggs are set. 
  3. Remove from oven and sprinkle remaining 1/2 cup cheese on top, allow to melt and cool slightly then serve.
