Ingredients:
- 1/8 cup Greek Yogurt, plain, unsweetened, whole milk
- 1/2 cup Olive Oil
- 40 each Green Olives, canned
- 1 head, medium (5-6" dia) Cauliflower, raw
- 6 teaspoons Harissa spice blend
- 1/4 teaspoon Salt
Directions:
Special equipment needed- Air fryer. In lieu of an air fryer, try this recipe on the grill!
- In a small bowl, combine the oil, lime juice, yogurt, harissa seasoning and salt with a fork or whisk. Set aside.
- Slice the head of cauliflower into ½-inch “steaks” and place in a resealable bag. Pour the marinade into the bag, seal and gently flip to coat all pieces of the cauliflower with the marinade. Allow to marinate in the refrigerate for 1 hour.
- Warm air fryer to 390° for at least 3 minutes. Blot the marinade off the cauliflower with a paper towel and create a single layer of cauliflower in the air fryer. Dispose of excess marinade. Working in batches if needed, cook for 4 minutes on each side, until browned and tender.
- Plate with the olives and serve. Each serving is 3-4 ounces of cauliflower and 10 green olives.
