Grilled Steak with Peppers and Onions

Ingredients:

  • 1/2 small Red Onion
  • 1/2 large (2.25 per pound, approx 3-3/4" long, 3" diameter) Green Sweet Pepper
  • 5 ounces Beef Tenderloin (Trimmed to 1/8" Fat, Choice Grade)
  • 1 tablespoon Light Olive Oil

Directions:

  1. Preheat grill.
  2. Season steak with salt and freshly ground black pepper. Place on grill and cook until browned on one side, about 5 minutes. Then flip over and cook other side an additional 5 minutes or until done to your liking.
  3. While the steak is cooking, slice bell pepper into 1 inch strips and onion into large slices. Coat with oil and season with salt and freshly ground black pepper. Put vegetables onto grill the last 5 minutes of cooking. Flip after about 2 minutes or until both sides are nicely grilled.
  4. To serve, put steak on plate and cover with vegetables. Enjoy!
