Grilled Eggplant with Mint Sauce

Ingredients:

  • 1/4 cup Peppermint (Mint)
  • 1 teaspoon Garlic
  • 1/4 cup Extra Virgin Olive Oil
  • 1 1/2 tablespoons Sour Cream (Cultured)
  • 2 pounds Eggplant
  • 1/2 cup Greek Yogurt - Plain (Container)
  • 1 medium (4-1/8" long) Scallions or Spring Onions

Directions:

  1. Preheat a grill to high temperature.  Dice the green onion and mince the garlic, set aside.
  2. In a medium bowl mix yogurt, mint, sour cream, green onion, garlic and season with salt and pepper to taste. Set aside.  Optional:  puree in a blender for a finer textured sauce.
  3. Toss eggplant with oil and season with salt and pepper. Grill eggplant until tender, about 5 minutes per side. Serve with sauce.
