Grilled onion rings and green bell peppers with capers in a cast iron skillet on a wooden cutting board.

Ingredients:

  • 2 medium (approx 2-3/4" long, 2-1/2" diameter) Green Sweet Pepper
  • 2 small Onions
  • 1/8 teaspoon Black Pepper
  • 1 ounce Black Olives
  • 3 tablespoons Extra Virgin Olive Oil
  • 1/8 teaspoon Salt
  • 1 tablespoon Balsamic Vinegar
  • 1 tablespoon drained Capers

Directions:

  1. Heat grill to medium.
  2. Grill vegetables 4 to 5 minutes per side until peppers are blistered and white onions are nicely browned. Remove from grill; cool 5 minutes. Rub skin off peppers and set aside.
  3. In a medium bowl mix olive oil, vinegar, black pepper, salt, diced olives and capers.
  4. Cut peppers into 1/2-inch strips and onions into 1/2-inch pieces. Add vegetables to bowl.Toss gently to combine ingredients. Adjust seasonings if necessary.
