Green Salad with French-Style Dressing
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 2 tablespoons Unsweetened Ketchup
  • 2 tablespoons Red Wine Vinegar
  • 6 cups Spring Mix Salad
  • 1 cucumber (8-1/4") Cucumber (with Peel)
  • 1 medium (4-1/8" long) Scallions or Spring Onions
  • 1/4 cup Canola Vegetable Oil
  • 2 teaspoons Sucralose Based Sweetener (Sugar Substitute)
  • 1/2 teaspoon Dijon Mustard

Directions:

  1. For dressing, combine oil, vinegar, ketchup, sugar substitute, mustard and coarsley chopped green onion in a blender and blend until smooth. Add salt to taste.
  2. Toss greens and sliced cucumber with dressing; divide onto four plates.
