Ingredients:
- 2 tablespoons Unsweetened Ketchup
- 2 tablespoons Red Wine Vinegar
- 6 cups Spring Mix Salad
- 1 cucumber (8-1/4") Cucumber (with Peel)
- 1 medium (4-1/8" long) Scallions or Spring Onions
- 1/4 cup Canola Vegetable Oil
- 2 teaspoons Sucralose Based Sweetener (Sugar Substitute)
- 1/2 teaspoon Dijon Mustard
Directions:
- For dressing, combine oil, vinegar, ketchup, sugar substitute, mustard and coarsley chopped green onion in a blender and blend until smooth. Add salt to taste.
- Toss greens and sliced cucumber with dressing; divide onto four plates.
