Fried Green Tomatoes Recipe

4 medium Green Tomatoes
0 3/16 Atkins Soy-Free Flour Mix
3 Tbsp yellow cornmeal, whole grain
0 1/2 tsp Salt
0 1/4 tsp Black Pepper
3 tbsp Canola Vegetable Oil
Use the Atkins recipe to make Atkins Soy-Free Flour Mix for this recipe, you will need 3 tablespoons.
- Cut tomatoes crosswise into 1/2-inch thick slices, you should have about 8 slices total. In a shallow plate combine cornmeal, flour mix, salt and pepper.
- Heat half the oil in a large nonstick skillet over medium-high heat. Dredge about 4 of the tomato slices (depending on size of pan) and fry 2 minutes per side, until golden. Repeat this process, wiping skillet between batches and adding the other half of the oil. Drain on a paper towel lined plate and serve immediately.
