Fried Green Tomatoes

Ingredients:

  • 1/3 cup Yellow Whole Grain Corn Flour
  • 1/4 teaspoon Black Pepper
  • 4 medium Green Tomatoes
  • 1/2 teaspoon Salt
  • 3 tablespoons Canola Vegetable Oil

Directions:

Use the Atkins recipe to make Atkins Soy-Free Flour Mix for this recipe, you will need 3 tablespoons.
  1. Cut tomatoes crosswise into 1/2-inch thick slices, you should have about 8 slices total. In a shallow plate combine cornmeal, flour mix, salt and pepper.
  2. Heat half the oil in a large nonstick skillet over medium-high heat. Dredge about 4 of the tomato slices (depending on size of pan) and fry 2 minutes per side, until golden. Repeat this process, wiping skillet between batches and adding the other half of the oil. Drain on a paper towel lined plate and serve immediately.
