French Onion Soup
Cooking tip: Try and shave off long, thin slices of Gruyere for the top of the soup to create the perfect bubbly cheese layer.

Ingredients:

  • 8 ounces Gruyere Cheese
  • 5 1/2 cups Chicken Broth, Bouillon or Consomme
  • 3 tablespoons Unsalted Butter Stick
  • 2 medium (2-1/2" diameter) Onions
  • 4 fluid ounces Sauvignon Blanc Wine

Directions:

Use the Atkins recipe to make Atkins Low Carb Wheat Bread for this recipe. You will need 4 servings/slices of bread; toasted.
  1. Cut onions in half and then thinly slice. Melt butter in a large heavy-bottomed pot over medium-low heat. Add white onions and cook 30-45 minutes, stirring occasionally, until onions are very soft and deep golden brown.
  2. Add wine and cook on high for 3-5 minutes, until reduced by half. Add chicken broth and bring to a boil over high heat. Reduce heat to low and simmer, covered, for 20 minutes. Season with salt and pepper to taste. Toast the bread.
  3. Pour soup into heat proof bowls, top with toast and Gruyere. Place bowl into a microwave for 1 minute until cheese is melted. Or if you prefer, place under broiler for 2-3 minutes, until cheese is brown and bubbles. Each serving is 1 ½ cup soup, 1 slice of bread and 2 ounces cheese.
