Five-Vegetable Sauté with Mint Recipe

2 tbsp Canola Vegetable Oil
1 medium Carrots
0 1/2 small Onions
1 small (5 per pound) Red Sweet Pepper
2 cup flowerets Broccoli Flower Clusters
2 cup, shredded Cabbage
0 1/3 cup Bouillon Vegetable Broth
4 tbsp Peppermint (Mint)
- Prepare vegetables by evenly dicing the carrots, onions, bell pepper and broccoli. Shred the cabbage. Set all aside.
- Heat oil in a large skillet over medium-high heat. Cook carrots, onions and bell pepper 5 minutes, until onion is softened. Add broccoli and cabbage, cook 1 minute more.
- Add broth; cook 8-10 minutes until broccoli is crisp-tender. Stir in mint; season to taste with salt and pepper.
