Five-Vegetable Sauté with Mint

Ingredients:

  • 1 medium Carrot
  • 2 tablespoons Canola Vegetable Oil
  • 1 small (5 per pound) Red Sweet Pepper
  • 2 cups shredded Cabbage
  • 4 tablespoons Peppermint (Mint)
  • 1/3 cup Bouillon Vegetable Broth
  • 1/2 small Onion
  • 2 cup flowerets Broccoli Flower Clusters

Directions:

  1. Prepare vegetables by evenly dicing the carrots, onions, bell pepper and broccoli.  Shred the cabbage.  Set all aside.
  2. Heat oil in a large skillet over medium-high heat. Cook carrots, onions and bell pepper 5 minutes, until onion is softened. Add broccoli and cabbage, cook 1 minute more.
  3. Add broth; cook 8-10 minutes until broccoli is crisp-tender. Stir in mint; season to taste with salt and pepper.
