Ingredients:
- 2 ounces Feta Cheese
- 1 teaspoon Extra Virgin Olive Oil
- 1/2 cup chopped Sweet Red Peppers
- 2 large Eggs (Whole)
Directions:
- Heat oil in a nonstick skillet over medium-high heat. Add bell pepper and sauté until tender. Remove from pan and set aside.
- Add eggs to pan and cook 2 minutes till underside is golden. Using a spatular and tilting the skillet, flip over. Place the sautéed bell pepper topped with cheese on half the eggs.
- Gently flip the other half over the mixture and cook an additional 1 - 2 minutes to melt the crumbled feta cheese.
- Slide from the skillet to a plate. Season with salt and freshly ground black pepper.
