INGREDIENTS

  • 2 tbsp Sour Cream (Cultured)
  • 0.5 cup chopped Zucchini
  • 2 large Egg (Whole)
  • 1 tsp Extra Virgin Olive Oil
  • 0.25 cup shredded Cheddar Cheese

DIRECTIONS

  1. Lightly beat together eggs and sour cream. Set aside.
  2. Heat a skillet over medium-high heat. Lightly sauté zucchini in oil for 2 minutes.
  3. Add egg-sour cream mixture and cheese to the skillet and scramble together until thoroughly cooked.
