Ingredients:

  • 1 teaspoon Extra Virgin Olive Oil
  • 2 large Eggs (Whole)
  • 1/4 cup shredded Cheddar Cheese
  • 2 tablespoons Sour Cream (Cultured)
  • 1/2 cup chopped Zucchini

Directions:

  1. Lightly beat together eggs and sour cream. Set aside.
  2. Heat a skillet over medium-high heat. Lightly sauté zucchini in oil for 2 minutes.
  3. Add egg-sour cream mixture and cheese to the skillet and scramble together until thoroughly cooked.
