Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
Ingredients:
- 2 cloves Garlic
- 4 teaspoons Dijon Mustard
- 1/8 cup chopped Young Green Onions
- 14 ounces Firm Silken Tofu
- 1 medium Pickle
- 4 tablespoons Parsley
- 1/8 teaspoon Turmeric (Ground)
- 1 teaspoon Salt
- 8 tablespoons Original Vegenaise
- 2 stalk, medium (7-1/2" - 8" long) Celery
Directions:
- Dice the tofu, celery, onions and pickles. Add all to a medium bowl along with the minced garlic and parsley.
- In a small blow blend to together the Vegenaise, Dijon mustard, turmeric and salt then add it to the tofu mixture. Toss until completely coated with dressing.
- Enjoy as you would egg salad by adding to Romaine lettuce leaves and rolling up or to a low-carb tortilla.
