INGREDIENTS

  • 12 piece Starlight Mints, sugar-free
  • 3 cup Heavy Cream
  • 0 1/3 cup Xylitol
  • 0 1/8 tsp Xanthan Gum
  • 2 tsp Vanilla Extract
  • 0 1/2 tsp Peppermint Extract

DIRECTIONS

For this recipe, crush 12 sugar-free peppermint candies in a plastic bag using a hammer. Divide equally into two small bowls; one with larger pieces and one with more of the dust. Set aside.
 
  1. Whisk together cream, granular sugar substitute, and xanthan gum in a heavy sauce pan over medium-high heat. Add half of the crushed peppermint candies (using the reserved finely crushed pieces). Heat until bubbles just start to from on the edges of the pan. Strain out un-melted candies (reserve and set aside) then pour liquid into a medium bowl and chill quickly over an ice water bath. Once chilled whisk in vanilla and peppermint extracts and place in the refrigerator for another 4 hours or overnight. (Chill the remaining small bowl of crushed peppermints and the strained candies from the liquid; separately.)
  2. Once the liquid is chilled, place it in an ice cream maker. Follow manufacturers directions for your ice cream maker. Churn ice cream until almost finished, adding all of the reserved chilled candies at the end. Freeze for at least 3 hours or use immediately as a soft serve ice cream. (If you do not have an ice cream maker, the mixture may also be whipped with an electric beater until foamy, placed in the freezer until semi-firm, and then fold in the candies and freeze until firm.) Optional: reserve some candies (or crush more) to sprinkle on just before serving. Makes 3-4 cups. Serving size is about 1/2 cup.
