Cooking tip: This simple recipe is a perfect accompaniment to any grilled protein. The key is trimming off the woody, thick sections of broccolini stems, covering the grill while cooking, and flipping broccolini often to cook evenly. The stems should be tender crisp when you remove from the grill.
Ingredients:
- 1 ounce grated parmesan cheese, divided
- 1/2 teaspoon lemon zest
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon crushed red chili pepper flakes
- 1 1/2 pounds fresh broccolini
- 3 tablespoons olive oil
- 1 1/2 tablespoons fresh squeezed lemon juice
Directions:
Ingredient note: roughly half of a large lemon will provide enough zest and juice for this recipe.
- Heat grill over medium flame.
- In a small bowl, combine ½ ounce grated parmesan, lemon zest, garlic powder, salt, black pepper and red pepper flakes until evenly combined.
- Trim clean broccolini of woody section of stems. Arrange on a baking sheet, drizzle with olive oil, tossing until evenly coated. Sprinkle evenly with parmesan lemon mixture, tossing to evenly coat.
- Grill half a lemon and broccolini, turning every 2 minutes until tender and some char has developed, about 8 minutes total. Place back on baking sheet, toss with juice from the grilled half lemon (about 1 ½ tablespoons) and remaining ½ ounce grated parmesan cheese, and serve while warm. One serving is about 1 cup (3-ounces) grilled broccolini as described.
