Keto Deviled Eggs
Cooking tip: For best results, make sure the eggs are hard boiled and completely cool before making this recipe.

Ingredients:

  • 2 tablespoons Celery
  • 1 1/3 tablespoons drained Capers
  • 1 teaspoon Dijon Mustard
  • 2 ounces boneless, cooked Fresh Ham
  • 4 tablespoons Mayonnaise (Hellman's Real)
  • 1 medium (4-1/8" long) Scallions or Spring Onions
  • 6 large Boiled Eggs

Directions:

  1. Cut the boiled eggs in half lengthwise; scoop yolks into a bowl and mash with a fork. Add the mayonnaise and mustard and mix until smooth and well combined.
  2. Dice the celery, onion and ham and place in the bowl with yolks.  Add the capers, mix well and taste. Season to taste with salt and pepper.
  3. Divide the yolk mixture evenly among the reserved whites, mounding it slightly. Garnish with paprika and parsley if desired.
  4. Eggs may be stored, covered in plastic in the refrigerator for up to 1 day.
