Ingredients:

  • 12 ounces boneless, cooked Chicken Breast
  • 6 cups Chicken Broth, Bouillon or Consomme
  • 1/3 cup Heavy Cream
  • 6 cups Baby Spinach
  • 3 tablespoons Fresh Lemon Juice

Directions:

  1. Finely chop the spinach and dice or shred the chicken. Add both to a heavy pot along with the chicken stock and heat over medium-high heat until it boils and the spinach is wilted.
  2. Add cream and continue to heat for another 3 minutes.
  3. Remove from heat, season with lemon juice, salt and freshly ground black pepper
